With a capital 'T'. This is the second year I've made tomato sauce. This time I didn't skin the fruit or simmer it for long hours on the stove, watching it and stirring it at regular intervals. I chopped 20 lb of tomatoes and put them in a large crock pot with chopped onion, celery and crushed herbs and simmered it for 12 hours. Then I pureed it right in the crock pot with an immersion blender. Wow, was that easy compared to last year!
